A smooth opening sets the tone for the entire shift. When the first guest walks through the door, every detail should already be dialed in — from the temperature of the walk-in to the volume of the music. This checklist covers everything a manager needs to verify before unlocking the front door.
Front-of-House Walkthrough
Start at the front door and walk the dining room the way a guest would. You are looking for anything that breaks the illusion of a polished, well-run operation.
Seating Inspection
- ✓Walk every booth and chair. Check for crumbs, spills, or sticky residue from the previous night.
- ✓Inspect vinyl and fabric surfaces for new tears, cracks, or peeling. Flag any that need repair.
- ✓Sit in at least two booths. Check foam firmness — if you sink noticeably, the cushion needs attention.
- ✓Ensure all tables are level. Wobbling tables are one of the most common (and most preventable) guest complaints.
Table Settings & Decor
- ✓All table settings are complete: silverware, napkins, glassware (if pre-set), and condiments.
- ✓Salt and pepper shakers are full and clean. Sugar caddies are stocked.
- ✓Menus are clean, free of stains, and current. Remove any with torn pages or outdated specials.
- ✓Tabletop decor (candles, flowers, tent cards) is fresh and properly placed.
Lighting & Music
- ✓All light fixtures are working. Replace burned-out bulbs immediately — even one dark spot changes the feel of the room.
- ✓Dimmers are set to the correct level for the time of day (brighter for lunch, warmer for dinner).
- ✓Music system is on, playlist is appropriate, and volume is set to conversational background level.
Bathrooms
- ✓Toilets flushed and clean. Sinks wiped. Mirrors spotless.
- ✓Paper towels, toilet paper, and soap dispensers are fully stocked.
- ✓Trash cans emptied. Floors mopped. Air freshener working.
- ✓Everything functions: locks work, faucets do not drip, hand dryers operate.
Entrance & Curb Appeal
- ✓Entrance is swept and free of debris. Sidewalk is clean. Outdoor signage is on and unobstructed.
- ✓Front door glass is clean. Door handles are wiped. Welcome mat is clean and flat.
- ✓Host stand is organized: menus stacked, reservation book or tablet ready, pens available.
- ✓If applicable: patio furniture is wiped, umbrellas are set, and outdoor heaters are tested.
Back-of-House Checks
Kitchen & Prep
- ✓Walk-in and reach-in cooler temperatures are logged and within safe range.
- ✓Line check completed: all stations stocked with mise en place, sauces, proteins, and garnishes.
- ✓Prep list is posted and assigned. Confirm all prep will be completed before service.
- ✓Equipment is on and functioning: fryers at temp, ovens preheated, grill scraped.
- ✓Dishwasher is running and sanitizer levels are verified.
Staff Briefing
- ✓Pre-shift meeting completed: specials reviewed, 86'd items communicated, VIP reservations noted.
- ✓Server sections assigned. Sidework duties confirmed.
- ✓All staff in proper uniform and groomed to standard.
- ✓Any callouts addressed — shifts are covered and floor plan adjusted if needed.
Technology Check
- ✓POS system is online and accepting orders. Run a test transaction if needed.
- ✓Credit card readers are charged and connected.
- ✓Reservation system synced — confirm tonight's reservations, large party notes, and special requests.
- ✓Online ordering and delivery tablet(s) are on, volume is up, and printer paper is loaded.
- ✓Wi-Fi is working (both staff and guest networks).
Weekly Deep Dive: What to Add Once a Week
The daily checklist keeps you running. The weekly deep dive keeps you from falling behind on the things that slowly degrade over time.
- ✓Upholstery inspection: Walk every booth and banquette with a critical eye. Look for seam separation, foam compression, cracking, discoloration, and any areas where cleaning is no longer effective. Log issues by seat number so you can track deterioration over time and schedule repairs before they become guest-facing problems.
- ✓Deep cleaning: Wipe down all vinyl and fabric surfaces with manufacturer-recommended cleaner. Clean under cushions and in seams where crumbs and debris accumulate. This extends material life and prevents odors.
- ✓Repair scheduling: Review your upholstery log and schedule any needed repairs. Catching a small tear early means a simple patch; waiting turns it into a full reupholstery job. Keep your upholstery vendor's contact information posted in the manager's office.
- ✓Floor and wall check: Inspect for scuffs, chips, loose tiles, and any wall damage. Touch up paint as needed.
- ✓Equipment maintenance: Check ice machine, HVAC filters, hood vents, and grease traps. Log and schedule any service calls.

Consistency is what separates good restaurants from great ones.
